December/January

German Hefeweizen (wheat beer)

A south German style of wheat beer (weissbier) made with a typical ratio of 50%, or even higher, of wheat. A yeast that produces a unique phenolic flavours of banana and cloves with an often dry and tart edge, some spiciness, bubblegum or notes of apples. Little hop bitterness, and a moderate level of alcohol. The "Hefe" prefix means "with yeast", hence the beers unfiltered and cloudy appearance. (source: Beer Advocate)

Typical examples: Paulaner Hefe- weissbier, Schneider Weisse, Franziskaner weissbier

Adnams cask conditioned German style Hefeweizen  4.1% abv
Using German wheat beer yeast, wheat, Pilsner malt, Munich and Caramalts along with Hallaterau hops this will be an opaque golden beer with aromas of cloves and bananas. Dry and crisp and spicy on the palate.

American India Pale Ale

The original IPA was first brewed in England and exported for the British troops in India during the late 1700s. To withstand the voyage, IPA's were basically tweaked Pale Ales that were, in comparison, much more malty, boasted a higher alcohol content and were well-hopped, as hops are a natural preservative. Historians believe that an IPA was then watered down for the troops, while officers and the elite would savour the beer at full strength.
The American IPA is a different soul from the original IPA style. More flavourful than the withering English IPA, colour can range from very pale golden to reddish amber. Hops are typically American with a big herbal and / or citric character, bitterness is high as well. Moderate to medium bodied with a balancing malt backbone (source: Beer Advocate)
Typical examples: Goose Island IPA, Stone IPA, Anchor brewing’s Liberty Ale, Sierra Nevada

Adnams cask conditioned American style IPA
4.8% abv
We will recreate this style using a Californian yeast strain; pale ale malted barley, along with some Munich malt, Crystal malt and malted wheat. This will provide the biscuity backdrop to the big American hops. We will use a blend of the 5 American hops, Columbus, Chinook, Cascade, Centenial and Wilamette. These hops will give our beer a deep citrus bitterness with a fragrant citrus/floral aroma.
